Chocolate bread pudding
Been experimenting in the kitchen for a bit lately and trying to revamp my favourite desserts such that they are healthier and not loaded with refined sugar and butter.
The chocolate bread pudding was absolutely delicious.
It's actually one of my first attempts at making a dessert purely using my tastebuds and senses.
Developing a recipe from scratch if you wanna call it
It was a ton of fun, starting from the basic ingredients- bread and then figuring bits and pieces of what a custard should or should not contain and tasting everything as I went along.
As a result, I don't have the exact measurements for everything, but I do have a rough sketch of it if you guys wanna try!
This is pretty much the healthiest as I can go in terms of a dessert, so feel free if you wanna sub out anything to make it even more healthy or as indulgent as you want it to be!
Chocolate bread pudding Ingredients:
3 slices of bread (depends on the size of your dish, mine was 6.5" in diameter)
1 egg
chocolate milk (i used a ratio of one part egg to one part milk so you just gotta eye ball it and judge yourself!)
1 tablespoon of cacao powder (or cocoa powder if you don't have cacao)
one teaspoon of brown sugar
one teaspoon cinnamon powder
chocolate chips/chocolate/kitkats (optional)
icing/powdered sugar (optional)
honey (optional)
How-to:
1. Fit your bread into your bowl, any way you like. I did mine by placing one slice on the bottom of the dish and then tore the other two into strips to form a spiral/rose like shape.
Try to have to crusts of the bread facing up, it looks better that way!
2. Crack an egg into a bowl/cup. Add as much chocolate milk into the cup so that you have equal amounts of egg and milk.
3. Add cacao powder into the mixture and mix everything until well combined. The cacao powder will take a bit of time to mix in, don't worry.
4. Add chocolate chips or pretty much anything you would like to at this stage.
5. Pour the mixture over your bread and into the dish.
6. Use a fork and press down the bread to ensure that it has been soaked by the custard mixture.
7. Let the dish rest in the fridge for at least 2 hours or overnight.
8. When ready to bake, preheat the oven at 180 degrees Celsius.
9. Sprinkle the brown sugar over the top of the bread and bake it in the oven for about 25-30 minutes.
10. The timing here is just a rough estimate, if you like a drier pudding, bake it for a bit longer, at a lower temperature (170 degrees maybe?), taking care not to burn it.
11. Allow it to cool slightly and then serve with a dusting of icing sugar on top!
I felt that mine wasn't really sweet enough without the sugar hence I added it after I took it out from the oven. But i didn't add chocolate chips so if you did, maybe you can omit the sugar.
I tried it without the icing sugar and used honey instead and it tasted just as good too so try that if you wanna!
Also, a good scoop of ice-cream would be lovely on top of the warm chocolate pudding....
Oh and it's called pudding but it simply has the texture of bread/cake soaked in chocolate custard.
Yeah.
If you want a more decadent version, replace half the milk with cream instead! It will work just as good i think, maybe just a richer flavour.
